So essentially depending on the chitin we could be in more or less trouble after consuming it and we can expect allergies to it galore.

There are also many questions about cooking it or some similar process to nixtamalization. While shrimp is q good example of human consumption of chitin it is thoroughly cooked thus breaking down the chitin somewhat, lobster/crab is a terrible example because you don't eat the shell and further, arthropod chitin us different from insect chitin just like chitins in the broad composition of mushrooms also being greatly different from insect chitin.

Chitin is why it's essentially impossible to overcook mushrooms, and it is almost certainly involved in the bulk of shellfish and mushroom allergies.

As a boy in the 90s I remember sharing a bag of chocolate crickets with my great grandfather, it wasn't terrible, but trying to replace our entire meat protein intake with grubs, crickets, ants, soy and and lab grown meat is genuinely insane.

This is essentially the equivalent of late game milk adaptation, you hear idiots complaining how we were never meant to drink milk, we weren't meant to eat grass either. Human diet isn't so flexible as to make way for efficiency without consequences. Just like pandas and bamboo, this will fuck up our digestive system, indigestible polymers are what we call "dietary fiber" but the harder the material the more likely we are to see damage to our soft tissues, lobster shell is a good example of a terrible idea, even cooked its shell would be a pain in your bowels. Now consider sunflower seeds, if you eat the seed whole, as I know a few people it will make your asshole bleed coming out the other end, that speaks volumes to the damage it causes between your lips and your anus and it is among the harder plant based dietary fibers approaching chitin.

The real test is what comes out the other end, I've never shat a shrimp carapace but i have shat corn hulls, I've never shat a recognizable shiitake mushroom. So if you know a bug eater ask them about their shit.

Eating bugs is not only fucking disgusting it is not an optimal protein source.

It is something we used to consume out of desperation in ancient times.

The reason they're pushing it is so they can enjoy the good shit and leave the peasants to consume the slop they can mass produce for cheap.

Being unable to digest such a thin part of it is probably(as far as I know) not a big deal however since that's how fiber works. It's one of the things that prevents you from having constant diarrhea.
