That looks tasty. Most commercial sausage has too high a fat percentage, that does look proper.

its soppressata, an italian cured meat, like salami. i just fried some thin slices up and had it on pasta with pesto.

Sounds delicious. Wonder if it would go good in a lasagna. Usually we use pepperoni.
