I call it rolling the eggs. I like using a large cooking spoon. Add a little bit of room temp sour cream to the eggs when you whisk them. Separate the yolks and Whites and whisk them in different bowls before recombining if you want to be fancy

for some reason I've got a memory of eggs and strawberry jam? so maybe sugar works OK, I haven't tried it
