I would eat a forever burger the rest of my life than those stupid ass impossible burgers.
Active water. That is the term that describes why some foods rot and others just dehydrate. McDonald's burgers and french fries have very low active water, meaning the water content is below the amount needed to support bacterial/fungal growth that would breakdown the food. Being very dry to begin with, the food just dries out further when left out and no microbes can actively break it down.
A wet food like a slice of watermelon has a high water content and microbe colonies can easily take hold and begin breaking it down. These types of foods must have proper handling/storage so they can't be trusted to be food-safe for very long if left out. The McD's food will still collect microbes from the environment, but so will an apple or carrot if left out. The microbes just won't multiply like mad without sufficient water so you're not actually getting any more or less microbes than you would get normally from any food.
If you don't like the McD's "forever burger" for these reasons, then I suggest you also give up eating un-sliced breads, dried meats (jerky) and dried fruits/vegetables too since they all stay stable due to lack of active water.
