I'm wondering why people claim that veal is better than beef. I have tried veal, and in comparison to beef it's basically insipid. Since my taste buds are working fine, I don't understand why somebody would prefer veil to beef.

It's the texture that people fawn over. But cook it even slightly wrong and that texture is gone.
