St Louis MO area stores still stock lots of commercial crayfish.... far from home, but ample supply. You cook yourself.

The real cajun swamprat down-delta cuisine is not crayfish, its government subsidized food found mainly in south orleans school districts , and also sold in all mini stores : frozen fish patties with cheese UNDER the breading, fried okra, blackeyes peas, both types of grits, countless types of beans and rice, fried foods, and Over 3,000 Authentic Cajun Food Products:: https://www.cajungrocer.com/

3,000 old-time cajun food products delivered anywhere and only marked up 80%. But that 3,000 item site has jack shit offerings for beans or rice vs a genuine swampland supermarket. It only has THREE BRANDS of beans! THREE suppliers?!?!?! : https://www.cajungrocer.com/bulk-beans

If you live deep in the cajun swamps, a store will carry 40 brands of beans, and 100 bean offerings. Not fucking three vendors like that 3,000 item store that only sells to millionaire foodie snobs pretending to be cajun.

I like the authentic smells of actual minimarts deep into swamplands though, and actual cajun supermarkets. They have a set of aromas in them few other stors have.

I also like the real shrimp wholesale OUTDOOR marketplaces (WHOLESALE!) and such. Most are indoor mega-warehouses , like in Tokyo, but the best ones are near the actual boat docks. Boat shrimp , not FARM RAISED tigershrimp, , are the the one no-compromise even a poor cajun will not skimp on. real shrimp.

thanks... I will have to in the future compare the stateline vs a few miles inland into Lower Alabama, to determine which side of stateline is twangiest. But you really have to visit that stateline section to be amazed at how twangy and bouncy the accent is. Its amazingly twangy.

Ypu are correct though that a full 30 minutes drive north of the coast ends you up in Alabama... so maybe I was in Alabama when I heard that astoundingly twangy voice.

I assume the people I heard south of alabama border (on the border) might have grown up in alabama perhaps, but maybe they were locals.

It's regional. Basically anything north of i10 is alabama.
