We just had the first meal of our latest homade sausage and cabbage and roasted sweet potatoes tonight, but instead of the Chinese hot sausage, we made kielbasa. Excepting we used refrigeration, not terribly different.

Garlic mostly, loads of fresh garlic. Bit of majorum, salt, pepper. The smoking really is the second major flavor after the garlic. Only real wood smoke truly brings out the proper flavor.
