Try pancakes with sugar free jam or sour cream. They taste great.
The jam contains fructose which, unless it's the unprocessed fruit, is a no no.

I have no idea. Sour cream is good with any kind of fried dough.
Agreed. We also consume a lot of sour cream, in fact you'd be hard pressed to find something it doesn't go well with IMO. For pancakes though it's fresh whipped cream all the way. With a dusting of cinnamon mmmm.
Sometimes I'll make apple pancakes or bacon pancakes, which are slices of apples or strips of cooked bacon dipped in pancake batter and then fried, in-freaking-credible.
