You're correct, thanks for pointing it out. I missed OP's reference to fat/grease. I thought he was talking about the water content. And yes the greasier the better. There's a lot of good stuff in animal fat but unfortunately and incorrectly it was demonized largely as a result lobbying in the 60s and 70s by the corn and sugar industries, resulting in abominations like The Food Pyramid that became the de facto standard for nutrition. The high carb-centric diet is literally killing us.
