You've gotta work hard if you want anything at all.

Do you fry them twice? I always have and they turn out great. Damn, always use peanut oil. Never thought about duck fat but I’m already thinking yum. I only make them about once every two years ....

I actually do 2 passes.

1st one, about 2 minutes, let them rest for 5 minutes, and then 2nd til done.

I do 2 passes as well, but cool in the fridge an hour or two before the second one. Getting some duck fat for the next time 👌🏻
