Yeah, I've heard 3/6/9 for boiling eggs. 3 minutes for cooked, but nothing hard. 6 for soft boiled, 9 for hard. Tried making a soft boiled this morning for 6, and had a really hard time peeling it. The white stuck to the shell really bad, and a lot of it ended up getting thrown away.
I believe the white sticking to the shell means the egg is fresh, with older eggs peeling much easier.
Older eggs are better for hard boiled eggs. I've found if I just buy eggs and boil them right away they can be very hard to peel. If they have been in the fridge for a week or more they tend to be easier to peel.
I've heard adding baking soda to the water can help with them peeling as well but haven't tried it.
