HR are lazy, and more importantly they know they're incompetent. They do not want to figure out whether you're really qualified for the job, mostly because they don't even know how. They want a piece of paper that says you're supposed to know it and experience that's supposed to prove you've done it. That way none of the blame falls on them if you turn out to be a loser.

You're not likely to get a job by saying, "Ah yeah, I learned that on Youtube." That would require HR to say, "We checked him out and he really does know what he's doing." Never gonna happen because now they're responsible for selecting good employees.
