From what I've read, the symbol is supposed to represent re-incarnation. However the idea that the snake brings knowledge and eating itself means a form of evolution as knowledge is passed from one generation to itself.
I think it's interesting what you propose, as it really is stupid when you think about it. Basically eating yourself is a self-parasitic mechanism that basically degrades you. Also, this snake is clearly fucking retarded.

Indeed, it symbolizes progression in that Children represent progression. As Osiris progressed through his son Horus, a snake sheds its skin, leaving behind the unnecessary for the necessary.
It's another symbol for infinity, immortality/divinity.
