There were more early Christian writings than the 27 Books that were to become the New Testament, and which was determined by the Catholic Church under the guidance of the Holy Spirit.
Latin was the dominant language throughout the Roman Empire. You can easily find the history of Latin for yourself. Even if someone couldn't read, they could hear the Word of God at the Mass where every part is rooted in Scripture.
