The real story is probably more like: A tax collector caught a peasant boy pissing in his egg drop soup and was stupid enough to be convinced it was an honor for the village to serve him eggs prepared in this "healthy" tradition.

I tried a couple of century eggs at a dim sum in Singapore the night before my return flight back to the states. Big mistake.

Thought I was going to die about 12 hours later on the plane. I never had such bad abdominal pain and diarrhea in my life. I don't recommend century eggs. The whites of the egg turn translucent, the yolks turn gray. Both generally retain their original texture and taste about like a boiled egg.

皮蛋 (pidan) are delicious when well prepared.

You are probably intolerant to its bacteria.

I had eaten them before with no issue. The eggs tasted fine, slight ammonia flavor, dark outer "skin" and the inner whites had a translucent yellowish color, yolks were gray with a sulphur overtone. I sampled at least 20 items at that dim sum, something else could easily have made me sick. I blamed it all on the century eggs. Gas like you read about. TOTALLY flushed out my intestines. And that was during a 36-42hr flight Changi to Narita to Chicago to home. Not fun. I felt really bad for whoever went to the head after me, and I HAD to go often. I was miserable.

They tasted fine to me, it was the aftermath that made them "memorable" - and I must have sampled 20 or more different items at dim sum, so it could easily have been something else I ate that made me so sick. The barbequed chickens' feet maybe?
