Not news to anyone but Americans tend to be more gregarious while Canadians more reserved. And to be clear that's not to say there are not any reserved Americans/gregarious Canadians so please spare me your examples of all the exceptions to this rule that you've personally known.

When I travel through the US I can bet that while I'm waiting in line to pay for coffee some guy is going to strike up a conversation and before I know it I've heard his whole life story, and that of his kids. Canadians might talk about hockey, or the weather, but if anyone starts telling you about his life then you know that he's probably insane and you'll start looking for ways to exit the situation politely. Emphasis on the word politely.

I learned the hard way that while in the US to not to look uppity niggers in the eye or call them out on their shitty behavior, and that goes double for sheboons.

Americans tend to be more insular thanks to the schooling, but America has had a longer and more 'exciting' history so it sorta balances out. Not that Canadians necessarily know a lot about the world but at least they are aware that other places exist.

I realize the question was about states vs. provinces but then I'd have to get into regional differences and I haven't traveled either country well enough to be able to do that with any sort of completeness.

Fundamental differences between the countries such as health care and how the governments are setup means that at certain levels the respective citizens think differently, and I think that contributes to each country's unique flavor. But the differences in our respective heritages plays the biggest role here I think, and where you don't have to turn over many stones to find an American who believes in his heart "America Fuck Yeah" you'll never find a Canadian who's as demonstrative about his country. Though the French can be very passionate about Quebec.
