Artichoke leaves - new one for me. I was also led to believe that oats were - in general - to be avoided in a mash, as they're oilier then barley and wheat for instance - tend to give your beer a shorter shelf life. But I see it is used much more now than when I first brewed/learned. His modified single stage mash may also help minimize oil transport. Neat technique - always interesting to see how others do things!

Artichoke is amazing for digestion, this would make the beer an excellent digestif.
