The dandelion mead sounds amazing. One of my favorite books is Dandelion Wine.
The honey pairs really well with the dandelion. Definitely one of my faves.
I only make a gallon per year due to the amount of effort involved. Takes roughly half a day to gather then pluck just the yellow part.
