to enjoy dry wines i suggest less sugar or changing sugar types. i like molasses unsulphered raw sugar cane honey and the sugar content of fruit is important. get a fruit about half wet maybe 2 days after a rain and the ground has soaked the water up if the water is standing the fruit will be water logged and will need alot of sugars to offset the dryness prolly 15lbs or 3.5 gals sugars rest fruit and water. find a yeast you like. i use reismann also the amount of yeast will determine your wine type
