Just cracked open some 5 yo mead, about 50% better than at 1 year. But not aged in bottles. Bottle aged is not as good.
I'll keep that in mind. I'm fairly new to brewing. I've read Mead is better when aged. I'll put a few bottles in a corner in my basement and forget about them. Did your bulk age it? I'm glass or a barrel?
I did it in glass because I’m too poor for a barrel. Turned out okay. My friend had some barrel aged and it wasn’t really anything special. You might want to put away like a dozen bottles and try one every year. It can go bad or just start to taste weird, especially all the specialty stuff. Or just lose its flavour and taste like crappy wine
