I tried my hand at green and fungus back in my youth. Hence my handle. Mead can be made with 1-3 lbs of honey per gallon. Most will use the happy medium with 2 lbs, but that can still be a bit sweet. Also if you use a high alcohol yeast like ec-1118 the yeast will eat all the excess sugar and give you a mead of 18-20% abv. That would probably give you a mead that is dry rather than sweet.

Dry mead. I’d try that if I wasn’t on Keto. You may be interested in “autoflower” greens. They grow to about 2 ft tall and start to finish is 8-10 weeks.
