Anyone else have trouble getting pork butts up to 190 or can give some hints I’ve gone 12 hrs at 210 and never got there

210 is a little bit too low and slow, always shoot for a minimum temp in your cooker of 225. That being said, I consistently get excellent product (of all kinds) cooking at 250.
