So I managed to track down some beef cheeks after watching the fat guys video and thought I would give them a try, the Czechs love beef cheeks and I had a bit of a problem sourcing some so close to Christmas. Fortunately my man at the farm was able to send about 25 lbs of them my way since everybody else in town was out of them. I also did a bunch of massive beef ribs and two rather large bone-in pork butts but the whole thing went a bit long, 20 hours. And that was just pit time, there were a couple of hours of prep beforehand.
At the end of the day (or morning or whatever, after 20 hours of nosleep I'm not sure anymore) they were absolutely spectacular. They really didn't smell nice when I was trimming them (the skin inside the mouth all had to go and smelled a bit like cow breath) but the final product is like butter in your mouth... if butter tasted like beef.

you can usually ask any local butcher to source them for you, same with tongue.... fuck brain even, even anything
i usually call the call the local processing place and go "i want such and such" they call me when ready cause i have a good rep with them.
or you could hit up an asian market
but yeah you want cook it down so it pulls, usually takes hours, you can pressure cook it tho.... i think most the flavor comes from the bone and best to get a giant stock pot and wait it out 5+ some hours
most places will divide it for you

I went to a few local butchers but they wouldn't have any for a few weeks and after that video I most certainly wanted to include them in my next cook. Fuck pressure cooking (you will see some serious smoke ring and bark in the pics), fuck asians, we only have some viets around here and fuck soup. The flavor of that sandwich after I hit it with some of my sauce was indescribable.
