Why is supply and demand so hard for people? Time and time again the problems of society are simply ones of supply and demand, or usually people's failure to comprehend.

When a politician says they can't get Americans/Australians to do some particular work, just ask them: "How many people would sign up for that work if it paid $1,000 an hour?" If the answer is anything other than, "they still won't sign up," what you have isn't a labor shortage but a price problem. People aren't selling their labor for what farmers want to pay. Farmers need to pay more. If they can't pay more then the market has spoken and the verdict is that they aren't willing to pay what it costs to produce that product. Stop trying to force the market to buy something it doesn't want to buy.
