Second cousin's son is turning 21. He works as a mechanic year round at the local ski resort, loves to mountain bike, snowboard, and his dog. I'd prefer to stay away from anything alcohol related.

Depends, but $300 is not unreasonable and if it is something terrific, I'd go a little higher....

If he gets a discount from the shop at the ski resort where he works, then cash would probably be best.
