A farmer produces a harvest and then sticks it in the granary. I would assume that he knows how much he put in there, but then what, is there a broker that manages the sale of it afterwards? Are all the grains the same? What if farmer A has better grain than farmer B and then they're all mixed in there. What happens then? I'm in Illinois currently in and I'm in a town that has a bunch of granaries and it got me thinking about how it all works.

No wonder good bread's so expensive. But you can't blame them to be honest.
