I've heard that having a consistent bedtime is beneficial. I think it makes sense that your body's hormonal cycle, while capable of adapting to change, might optimize itself under predictable circumstances.

That being said, I'm terrible about going to bed at a specific time. Thoughts?

I find that I operate best on about 7.5 hours of sleep. I go to bed at the same time every night and I wake up without an alarm at somewhere between 7 and 8 hours later. I love it and I have never felt more rested. If I am awakened early by some necessity I take a 20 to 40 minute nap in the middle of the day and resume my sleep schedule. I never struggle to sleep anymore. I am also able to predict when I am about to get sick by observing a sleep cycle of longer than 8 hours. I adapt my nutrition and supplements and typically am sick for no more than 2 or 3 days.

I regularly use an alarm and I feel like it's a bad habit. I'll wake up at some interval before the alarm and say "Oh, I've got more time to sleep". Then, I'll start a new sleep cycle that gets interrupted by my alarm.
