A youtube channels "Townsends" is pretty amazing about historic food and building, survival stuff couched in "history".

Check archive.org there's probably stuff there.

Get a physical copy of De Re Metallica if you want to start mining and refining metal again.

You won't be able to do it on your own though, you'll probably need at least a few dozen slaves to really get the operation going.
