From what I read, Signal is as good as you'll get
Keep believing. You haven't looked into the protocol if you think that all data routed through a central server is "secure".
Signal was purchased for this exact reason. It was originally built in a privacy-first way. This, as usual, got the higher-ups upset, so they bought signal and routed all traffic through their servers. This exact same thing happend with Skype (See FOSDEM 2014 conference).
They're now grifting off of what signal WAS. Most idiots thinking it's actually secure, so they're more likely to share compromising information.
But, by all means, believe your masters.
