They associate all of the genetic profiles they can get. If they have relative DNA, they will associate the DNA back to the family tree and sell it accordingly. In the vast majority of cases, assuming they have DNA of close relatives, they will map it back to you and likely know who you are.

AFAIK, there are no anonymous or safe DNA testing facilities available.
