Make friends with a local farmer, or use one of the services that middle-man for you. Most small ranchers/farmers make more than they can eat and want to sell some, so if you can make a deal with them to purchase like 1/2 a cow (yes you can do that, some services help put people together for that) where they deliver it to a butcher and you get 1/2 the meat. When the farmer knows that his extra sheep/cows or whatever are sold once it gets full sized, they are more likely to keep the size of their herd up (we're all down sizing because of the price of feed).

The real key here (for those who think like us) is that if SHTF and you've been a customer of theirs who speaks to them from time to time and they know you will continue, they'll probably try to keep you fed as well.
