I have a new gas stove being delivered tomorrow. Is there anything I need to do to break it in aside from turning my hood on high and cranking the oven past 400 degrees for an hour or two?

You say stove and oven which I assume means range top. Adjust the low to a notch above the lowest gas setting where the burners (all ports) stay lit. Normally these come set too high to avoid liability. But it means low isn't really low without this adjustment.

Normally you take the knob off each burner and there is a small screw to turn inside the knob's "stem" which adjusts flow.

Open the valves full blast to purge the air out. Leave it go for about 4hrs then try to ignite it

You actually want to leave all the plastic packing attached and let it catch on fire to properly dispose of it in a safe and effective manner.

The dioxin from the combustion acts as a purification agent.

If you are the one installing it, make sure you bleed the lines, otherwise you’ll think it isn’t working. Bleed the lines before lighting the pilot.

Wipe down the entire interior of the oven (racks included) with vegetable oil and let it burn at the highest heat setting for 30 minutes. That what was recommended for my smoker at least.

First, good for you for going the traditional route. Though it will be tempting at first, don't overload your gas oven. Too many in a batch doesn't allow for proper air flow. The door should close smoothly, easily, and, above all, securely, in order to prevent having to chase them around.

Second, All things in their own good time. Don't try to accelerate the incineration process by setting the burners too high.

Third, remember that the screams of "Oy vey!" are completely normal, and you will find that they always eventually stop. If they annoy you, try wearing both a good quality pair of earplugs and noise canceling headphones while playing Wagner at high volume.
