No. The government shouldn't be in the position of taking sovereignty away from parents. Children are protected by their parents, not a tyrannical government.

So children should be able to to behave like adults because you trust the parents to police it? I disagree with you there. We'd have 8 year olds drinking and smoking because it's "their right"

Now you're talking subversion by the government. That's the problem. Our government is hostile, schools are hostile. Our children are bombarded with decrepincy by everyone they're exposed to. The latest being gender dysphoria. I advocate home schooling for this very reason. I even helped start a school many years ago to send my children to because I didn't like the institutions back then.

21 years Raise the military enlistment/voting age from 18. You need to experience life outside of school before making important decisions.

I say do the Euro model and let them have beer at 16 so that kids get used to stuff while still under the parents influence, but yeah it may collide with the whole 16 driving thing the US has.

South Koreans start at 14-15 but I can't comment on how well that works for them. Japan has beer vending machines too.

Not sure but Japan seems to be too goody good so underaged seem mostly not to drink...well at least thats what the media is telling me.
