I think canoes are but kayaks are definitely plastic, all the ones I've used/seen.

Depends on what they're made of. I've never seen an aluminum or concrete kayak, only canoes, but I've seen plenty of canoes and kayaks made out of plastic (ABS and PVC), fiberglass, kevlar, canvas, wood, and carbon fiber.
