What if China simply announced it is taking Taiwan and moves troops in ?

The U S could simply do nothing , except maybe deliver a strongly worded speech or two.

The U S could send Carrier groups etc , and engage , but what if they suffer major defeats ?

The US won't do a damn thing if China invades except complain and maybe "sanction" some CCP officials. If Xiden imposed the same sanctions they did on Russia, Walmart and Target would be closing hundreds of stores, GM and Ford would idle all production, Apple would have to close down to retool in another part of world, etc. It would be a massive economic collapse that would probably put 2/3rds of the country on the street.

The alternative is World War 3 and US would probably lose. Neither China or Russia will go under without throwing nukes to make sure the US goes with them.
