Go to court, subpoena the officer and request to go over the evidence collected against you so you may build your case. There is a chance the prosecutor hasn't even filed a motion yet in hopes you are just going to plea guilty and pay the fine. In which case you can demand they do so in 30 days or be sentenced to jail time. Once you have a case against you, file an affidavit, saying you were indeed not intoxicated, there is no proof of it, and it's your word against an officers opinion.

A witness testimony, is true until proven untrue. If you represent yourself, you jabe the power. If you get a lawyer you cannot act as your own witness
