when i am asked to bring a dish it is usually poppers. i like to cook some high quality chorizo, and mix it with cream cheese for the filling, stuff it into jalapenos and wrap in bacon and then cook over a charcoal grill with plenty of oak chips. i think using chorizo instead of breakfast sausage makes a difference, as well as using high quality wood chips.

the other thing i am told i do well are 3 egg omelettes. you get the right cheese to melt and don't burn the eggs and serve with a slice of avocado and maybe some sliced tomatoes on the side and it is a great meal.

making burgers out of fresh ground brisket is also good.

Years ago I came up with a spagetti squash dish, family requests I bring or serve it at holiday parties every year. Roast spagetti squash Make cheese sauce (rue) flour/butter/black pepper add whole milk,cream cheese, favorite mild cheeses, and maybe some garlic. Make this rue on the thicker side, as you'll be adding it to a relatively wet squash.

Free the squash from it's skin with a fork, combine with sauce (salt to taste) and pour half in a lasagna pan, shingle zucchini as a middle layer, add the other half, topping with bread crumbs and finely grated parm. return to the oven and cook until bubbling.
