I expect some great answers here since this is an interesting community.

when i am asked to bring a dish it is usually poppers. i like to cook some high quality chorizo, and mix it with cream cheese for the filling, stuff it into jalapenos and wrap in bacon and then cook over a charcoal grill with plenty of oak chips. i think using chorizo instead of breakfast sausage makes a difference, as well as using high quality wood chips.

the other thing i am told i do well are 3 egg omelettes. you get the right cheese to melt and don't burn the eggs and serve with a slice of avocado and maybe some sliced tomatoes on the side and it is a great meal.

making burgers out of fresh ground brisket is also good.

I marinate sliced up pork belly in teriyaki sauce with ginger, garlic, coriander, some brown sugar and some other spices then pan fry it, take it out. Stir fry vegetables in the lard of the pork belly I just cooked and the marinate until it reduces and caramelize. Then serve it over a quinoa, rice bed.
