when i am asked to bring a dish it is usually poppers. i like to cook some high quality chorizo, and mix it with cream cheese for the filling, stuff it into jalapenos and wrap in bacon and then cook over a charcoal grill with plenty of oak chips. i think using chorizo instead of breakfast sausage makes a difference, as well as using high quality wood chips.

the other thing i am told i do well are 3 egg omelettes. you get the right cheese to melt and don't burn the eggs and serve with a slice of avocado and maybe some sliced tomatoes on the side and it is a great meal.

making burgers out of fresh ground brisket is also good.

Anglo Katsu

It's chicken breast cutlets breaded with semi-blendered green apple oatmeal packets.

Pan fried and then set atop a bed of steamed rice and drizzled with Newman's own sesame ginger dressing.

It's my own recipe.

katsu is fantastic. had it in hawaii a few times. essentially breaded (not sure if that is specific or can be a variety of ways like your oatmeal) and fried chicken or pork, right?

The sushi bars all serve it down here. It comes with this awesome teriyaki BBQ sauce that you can dip it in.

Years ago I came up with a spagetti squash dish, family requests I bring or serve it at holiday parties every year. Roast spagetti squash Make cheese sauce (rue) flour/butter/black pepper add whole milk,cream cheese, favorite mild cheeses, and maybe some garlic. Make this rue on the thicker side, as you'll be adding it to a relatively wet squash.

Free the squash from it's skin with a fork, combine with sauce (salt to taste) and pour half in a lasagna pan, shingle zucchini as a middle layer, add the other half, topping with bread crumbs and finely grated parm. return to the oven and cook until bubbling.

You can slow smoke a beyond meat slab. Problem is it tastes like actual shit I hear.

Grilled Pork tender loin that's red in the middle and charred outside with capers. Small potatoes grilled with oil, salt & pepper.

Lately I've been into doing slow cooked meat nachos with sweet bbq sauce. top em with Pickled red onions that take about 10 minutes to prep, your friends will think you're some kind of redneck Gordon Ramsay.

Depends on what time of year, warm weather grilled whole sirloin on the outdoor grill, with charcoal baked potatoes with southern corn. Cold weather polenta with a three day stew. Both served with home made tax free booze.

I marinate sliced up pork belly in teriyaki sauce with ginger, garlic, coriander, some brown sugar and some other spices then pan fry it, take it out. Stir fry vegetables in the lard of the pork belly I just cooked and the marinate until it reduces and caramelize. Then serve it over a quinoa, rice bed.
