There have been a few good suggestions already (leather working, knife / tool sharpening) for sideline work. Have you thought about a trade that allows you to be your own boss?

My landscaper does the whole thing himself. Well, his son just started helping him, but up until a few weeks ago it was just him. No crew of illegals to worry about, just a riding mower an edger and a leaf blower.

Same thing for the mobile dog groomer that comes to a number of houses in my area. It's one guy who slowly built up enough clients until he could quit his 'regular' job.

The knife sharpening and leather working look good. Heck tie that to tailoring.

I left the trades years ago for a desk job and very frequently regret it. (Unless the weather is shitty enough to remind me why I left.)

There was a guy who did a mobile booth knife sharpening at farmers markets. Charged a dollar an inch. Did a total shit job you could see was shit from 3’ away. Had a fancy booth with a few tools and a generator. Probably made $500 a day or more. Imagine what it could have been if he had even part of a clue after 6 minutes of YouTube. Was really popular.
