It's not the deaths itself, but the number of deaths compared to previous years. Statistics if you will.

You're right and that's how they get COVID associated deaths. See how excess deaths stay consistent since the pandemic started?(https://ourworldindata.org/grapher/excess-mortality-p-scores-projected-baseline?country=USA) If it was due to the vaccine the excess deaths wouldn't start until that was introduced, not back in '20
