I noticed over the winter as beef prices went up in the grocery stores, the price at my local butcher was going down. He told me his price per cow was going down, as there was a backlog at all the major processors. I can't verify any of that but my own anecdote is that you win by buying directly from the people doing the work.

Nice. I currently do 90% of my shopping at a local farm market and butcher.
Feels good to avoid the large chain grocers.
