If you want to be a Christian, you try your best to do as Christ did. The things Christ did from baptism forward (actually from overcoming temptation in the desert) was an example for us. If we are not to keep the Sabbath, Christ would not have set that as an example. If we were not to keep the Sabbath, Paul would not have continued the example for us. The old covenant was not disregarded in favor of a different doctrine, it was fulfilled by Christ. The Sabbath day order was changed from animal sacrifice to worship in spirit and truth.
What you are saying is that the old covenant can be completely ignored because it is a different thing, but it is not. If your doctrine relies on 1 or 2 verses about being saved by grace, you've been mislead. Understanding the Sabbath of the new covenant is the first step in understanding the depth and purpose of the new covenant.
