I don't know from experience, but the redness of meat corresponds quite well with the size of the animal. Smaller critters have whiter meat. Their muscles are smaller and finer, as the size of the cell also corresponds roughly with the size of the animal. Rabbit and chicken are very alike. So are dog and goat, human and pig, horse and cow. The reddest meat of all is whale meat, which can be found in Japan.

That makes sense. Ostrich, zebra, kudu, springbok are similar to beef. Crocodile is a bit like pork.
