I don't know from experience, but the redness of meat corresponds quite well with the size of the animal. Smaller critters have whiter meat. Their muscles are smaller and finer, as the size of the cell also corresponds roughly with the size of the animal. Rabbit and chicken are very alike. That makes sense. Ostrich, zebra, kudu, springbok are similar to beef. Crocodile is a bit like pork.
