Paprika

The smoked variety is tastier.

But can be too much for certain things. Paprika is just a dried and ground pepper. The cheap ones are just bathed in liquid smoke, which tastes like coal plant chimney. Buy good quality spices, preferably in bulk amd store them in mason jars in a cool dark place ( not above the stove).

If you don’t know where to find these, vitacost caries great stuff, ships fast and in general does a great job. There aren’t far from you, likely one or two days to your door.

It’s ok, there is a great variety though of flavors both in peppers, drying methods, and especially smoking. It’s also fun to make your own spices.

I dry my own garlic, ginger, herbs, paprika , smoked paprika…. The potency when done at. Or react temperatures and humidity and not bulk processed and stored for a year somewhere is amazing. Likely 2-3 times more potent.

My rib rub totally surprises people, as does most my spices. Simply sniffing the open dried ginger jar is close to getting pepper sprayed. Good times, takes some hours but the results are impressive. Like all things there is a range from bad to mediocre to good to exceptional.
