In the past taking over brick and mortar buildings in the capitol would mean something,

But in todays world with all information being so digital, and taxes being filed and paid with software through banks, rather than through mail.

What significance would taking over the capital really have? It seems like all Russia needs to do is be the one in an area with the most guns and say they are in charge. The media is putting a ton of focus on the capital. Why is that city so important?

Grozny sounds like it was a shit show for the russians. If they killed the grid, controlled the airspace and all roads into the city, why didnt they use siege tactics? No need to destroy the city, just wait for them to starve and surrender.

They want their hearts and minds. The Russians want the average Ukrainian to wake up to who really controls them. Starving them works against this objective.

Maybe so, but they still achieved the clear military objective of taking full possession of the city & surrounding area.
