It's SO much better than a cauliflower crust!
Take 4 or 5 eggs, whip em up, put way too much seasoning in them, put then in medium high in a skillet and forget you are cooking eggs. When you remember come back and flip it. Should be like egg leather. Chewy and drying to the mouth and the worst thing to ever happen to eggs, but it is an EXCELLENT keto tortilla or base for a pizza.
There's a fancy name for this but I can't remember... I just pan "fry" (melt, really) shredded cheese in a skillet and it can either turn out somewhat pliable like a tortilla/wrap, or crispy. Top it with a fried egg, avocado, and salsa for huevos rancheros, or top with marinara and pizza toppings.
I've been using when I need a tortilla, I'll have to give the overcooked omelette a shot.
