They make cinnamon rolls by rolling out dough then covering the top with sugar cinnamon then roll it up so there are layers of alternating dough then sugar cinnamon.
In a large bowl using your hand combine the hamburger with 2 raw eggs squeezing the eggs and meat together like mixing water into clay so the mix oozes out between your fingers, it's slimy and sometimes the eggs squirts out of the large bowl so go slowly just mushing it all together. Now lay out some waxpaper or something that the hamburger won't stick to badly to. Then when you have a rectangle about an inch or so thick and as wide as the bread pan you plan to bake the meatloaf in. So top that hamburger but stay a 1/2 inch from the edge with shredded cheese your choice though a combination of cheddar and sharp cheddar blend works well. Now lay out bacon strips lengthwise. Now roll that baby up like a cinnamon roll and close the ends a little to let some bacon grease out but not let all the cheese out at the same time. Now back like normal topping with whatever you choose or nothing at all. It will be greasy if you use bacon so you might want to put something wire like a for cooling cookies on to keep it a little off the bottom of the pan so it's not floating grease and you'll still have some grease inside so it's not going to be dry plus the eggs keep the meatloaf from being flaky and help it retain some moisture and flavor also.
