I get a quarter cow every year to stock my freezer. When it runs out i don’t always time the next order right or sometimes there are delays so I buy organic supermarket ground beef. It is OBVIOUSLY different and I dislike the taste. More watery, less flavorful. Up until this latest buy, I always got grass fed grass finished and wanted to try grass fed grain finished. The grain finished is more tender I think, but it does sacrifice some flavor, IMO. I plan to go back to grass fed grass finished next time.

Note that even at the supermarket when something says “grass fed” that can mean the cow was fed dry hay in a feedlot and it also can mean that it was “grain finished.” You notice the labels never say “grass fed grass finished” because those are two different parts of the cow’s life and I’m gonna guess all industrial cows are grain finished if “big business organic.”

Your best bet is to find a farmer and buy local. I have a great relationship with a semi-local farm and we just budget for the slightly higher cost for quality. $650-700 for over a half full chest freezer that lasts us about 9mo to a year. We do supplement with chicken and other supermarket meats that are lower quality but “organic/natural.”
