Even though it’s legitimately a massive inconvenience to myself and my employer, what would they actually try to pull if I just decided not to show up. I realize fines and jail time as well as a misdemeanor are on the table, but is that really even likely?

You're better off applying for a postponement than being a no show if its inconvenient at this time.

I sent an excuse in with my questionnaire, is a postponement different?

There is usually an option to postpone, I've done it before.
